Für 2 Portionen:

  • 4 Eier
  • 2 TL fettarme Milch
  • 1 gehackte kleine Zwiebel
  • 2 gehackte Knoblauchzehen
  • 2 kleingehackte grüne Chillies (wer es nicht so scharf mag nimmt einfach 1 gestrichenen TL Currypaste)
  • 2 TL Tomatenpürree
  • 1/2 TL Kümmel
  • 1/2 TL Currypulver oder Garam Masala
  • etwas Öl
  • gehackter Koriander (wer es mag)

Zubereitung:

  1. Eier und Milch in einer Schüssel gut verrühren
  2. Zwiebel mit Knoblauch und Chillie in einer Pfanne mit etwas Öl anbraten
  3. Tomatenpürree und Gewürze zufügen
  4. Braten bis der Currygeruch intensiver wird
  5. Eimasse zugeben und ein Omlette zubereiten
  6. Mit Koriander servieren

Egg and Onion Bhurji

Ingredients (Serves 2)

  • 4 eggs
  • 2 tablespoons of fat free milk
  • 1 diced medium onion
  • 2 crushed cloves of garlic
  • 2 finely diced green chilies
  • 2 teaspoons of tomato puree
  • 1/2 teaspoon of turmeric
  • 1/2 teaspoon of masala or curry powder
  • 2 teaspoons of rapeseed oil
  • 1 tablespoon of chopped cilantro/coriander to garnish

Method

  1. Beat the eggs and milk in a bowl.
  2. Fry the onion, garlic and chillies in the oil until the onion is soft.
  3. Add the tomato puree, tumeric and masala/curry powder and cook for a further 2/3 minutes.
  4. Add the egg mixture and stir until the eggs are cooked to the consistency you prefer.
  5. Serve immediately garnished with the chopped cilantro/coriander.
