Als ich neulich in Shanghai war, bin ich wieder an den vielen Ramen-Restaurants vorbeigelaufen.. Wer Ramen nicht kennt – das sind wunderbar leckere Nudeln, die es in ganz vielen Nudelsuppenvarianten gibt. Leider handelt es sich hier um Weizennudeln – die sind natürlich nicht dukanisch… aber das läßt sich ja ändern.

Für eine perfekte Shirataki-Ramen-Suppe braucht Ihr pro Portion:

  • 1 Hühnerbrust (200 g)
  • 1 Packung Shirataki-Nudeln (wenns geht die dicken)
  • 2 Frühlingszwiebeln
  • Chilli (wer es gerne scharf mag)
  • Bambusschößlinge oder Sojasprossen
  • Hühnerbrühe
  • Sojasoße (idealerweise salzarm)
  • Knoblauch

Die Zubereitung ist denkbar einfach….

  1. Die Hühnerbrust im Ganzen mit ca. 400 ml Hühnerbrühe zum kochen bringen und (abhängig von der Dicke des Huhns) ca. 20 min leicht kochen (Brühe sollte nur simmern, nicht richtig kochen)
  2. Huhn rausnehmen und in dünne Scheiben oder Würfel schneiden
  3. Shirataki-Nudeln gut abwaschen und in die Brühe geben
  4. Gemüse klein schneiden, Knoblauch klein hacken und alles zurück in die Brühe geben
  5. alles zusammen nochmal ca. 10 min köcheln lassen und mit Sojasoße und Chili abschmecken…

ich liebe diese Suppe und esse sie mit den Shirataki-Nudeln jetzt sicherlich öfter

Currently I have been on a business trip to shanghai. There I have seen a lot of Ramen Restaurants – where you get noodles as soup, fried etc. Unfortunately the original Ramen noodles are not dukan-like as they are made of wheat… but you can reach a comparable result with Shirataki Noodles!
You need for 1 serving:

  • 1 chicken breast (200 g)
  • 150 g of shirataki noodles (if you get, takte the thick ones)
  • 2 spring onions chopped
  • Chili (if you like it spicy)
  • soy sprouts
  • chicken stock
  • soy sauce (low sodium)
  • fresh coriander
  • garlic chopped or pressed

The preparation is very simple

  1. Cook the chicken breast as a whole in approx 400 ml of chicken stock (this makes it soft in the middle and it does not dry out). Take it out of the stock and cut it in slices or little pieces
  2. Wash the Shirataki noodles an put them in the stock
  3. Add the other ingredients
  4. Cook for approx 10 min and season with soysauce, chili and garlic
  5. garnish with coriander

I love this soup and it is my favorite dinner!
