Ein Klassiker der Dukan-Küche sind Eier… hier als Eier Benedict z.B. für einen schönen Brunch

Das Ei

  • 1 Ei
  • 1 Eigelb
  • 4 Scheiben Puten Coppa (oder mageren Schinken)

Für das Ei (einfache Variante)

  1. Schinken in einer Pfanne anbraten (oder auf ein Küchenpapier in die Mikrowelle geben, wird auch knusprig).
  2. Ei in eine Pfanne schlagen und das zweite Eiweiß darübergeben.
  3. Von beiden Seiten fertigbraten

Für das Ei (Profivariante) – hier wird kein 2. Eiweiß benötigt:

  1. Ein kleines Glas mit 2 EL Essig füllen. Ei hineinschlagen und 5 min stehen lassen (nicht rühren, das Ei soll nur rundherum mit Essig benetzt sein)
  2. Einen Topf mit Wasser aufsetzen, Salz hinzugeben und zum simmern bringen (kurz vor kochen, es steigen schon kleine Blasen auf aber das Wasser kocht noch nicht komplett).
  3. Jetzt mit einem Schneebesen so kräftig rühren, dass ein richtiger Strudel in der Mitte entsteht. Der Trichter muss richtig tief sein. In diesen Trichter jetzt das Ei (mitsamt dem Essig) geben.
  4. 2 min simmern lassen – dann ist das Eiweiß fest und das Eigelb noch leicht flüssig.
  5. Auf den Speck geben und mit Soße übergießen

Für die Sauce

  • 1 Eigelb
  • 1 TL Dijonsenf (ich mag am liebsten den mit Kräutern, auch wenn der sehr grün ist)
  • 2 TL Zitronensaft
  • 2 EL ml warme Milch

Für die Sauce:

  1. Das Eigelb, den Senf und Zitronensaft verrühren (Schneebesen) und in einem kleinen Topf oder einem Soßentopf vorsichtig auf dem Herd erwärmen. U
  2. Unter ständigem Rühren erwärmen (nicht kochen) bis das Eigelb immer dicker wird. Nun die warme Milch hinzufügen und unter Rühren ca. 2-3 min weiter erwärmen. Die Sauce wird gelblich  und dick, von der Konsistenz wie eine Hollandaise.

Egg Benedict is a classic egg receipe – unfortunately it includes a very rich sauce holandaise which is not very dukan 🙁

An easy dukan version is

The egg

  • 1 egg
  • 1 egg white
  • 4 slices of low fat bacon

Preparation (easy version)

  1. Put bacon on a plate with some tissue and make it crispy (about 2 min on high)
  2. Put some oil or pam spray in a pan and put egg in pan, wait 30 sec until egg white starts to become solid and pur the additional egg white on. This creates the poached egg effect.
  3. bake on two sides and arrage  on bacon on a plate

Poached egg (professional version)

  1. Fill a small glass with 2 table spoons of vinegar and crack the egg into it. Let it rest for approx 5 min.
  2. Fill a big pot with water and salt and bring to cook. If it cooks, take an egg whisk and start vigorously to bring the water to circle. There must be a tiny tornado in the middle of the water. Pour the egg with the vinegar exactly in the middle of that tornado and maintain the tornado by continously whisking around the pot.
  3. As soon as the water cooks again, lower the temperatur to a simmer. Make sure that the tornado is still there – this ensures that the egg white is wrapping around the egg yolk and you get that cushion-like form for the egg
  4. Take out after 2 min (the egg yolk is slightly liquid then)

For the sauce

  • 1 egg yolk
  • 1 tea spoon of dijon mustard
  • 2 tea spoons of lemon juice
  • 2 table warm milk

Preparation:

  1. Whisk the egg yolk, the mustard and the lemon juice together ( it must become a bit creamy). Add the warm milk and pour into a small pot. Never stop whisking – and slowly heat up the mixture. it will become thicker and very creamy.
  2. It is ready after approx 5 min. I achieve the best result if I do it in a water bath and whisk by hand
