Knusperkekse

Manchmal möchte ich morgens keinen Haferkleie-Brei sehen, oder bin einfach den ganzen Tag unterwegs. Dann sind diese knusprigen Kekse ideal – sie enthalten keine Tolis.
Ich backe immer 2 Portionen, die Kekse bleiben wirklich 1-2 Tage knusprig

Für 2 Portionen

  • 4 EL Haferkleie
  • 2 TL Xucker (oder Stevia)
  • 1 TL Backpulver
  • 1/2 TL Zimt
  • 1 Eiweiß
  • Vanille

Zubereitung

  1. Ofen auf 180 Grad vorheizen
  2. Alle Zutaten mit einer Gabel gut verrühren
  3. 4 Kekskleckse auf ein Backpapier-Blech geben
  4. 12-15 min backen… warm sind die Kekse noch weich, kalt werden sie knusprig

Some days I can’t see oatbran anymore – not as a pancake, not as a porridge – but as I need to eat it, I have searched for a good option for that stuff.

Those cookies are crispy – I always bake 2 portions as they remain crispy for 1-2 days.

For 2 portions:

  • 4 table spoons oat bran
  • 2 tea spoons sweatener (caramel flavour if you get)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 egg white
  • vanilla

Preparation

  1. Preheat oven to 180 degrees
  2. mix all ingredients with a fork
  3. put 4 cookies on a baking tray
  4. bake for 10-12 min. They are soft when they are hot and get crispy if they cool down

Frischkäsekugeln

Ich liebe Frischkäsekugeln – früher habe ich die ab und zu von Alnature gekauft – lecker mit Ziegenfrischkäse und Öl und Kräutern…. aber leider nicht so ganz Dukantauglich.
Aber natürlich kann man die auch wunderbar dukantauglich herstellen.
Ihr braucht für 1 Portion (ca. 15 Kugeln)

  • 1 Packung Kräuterfrischkäse Exquisa 0,2%
  • 3 EL Magerquark (den ganz billigen festen, der andere ist zu flüssig)
  • 3 EL gehackte Kräuter (ich mag Basilikum, Frühlingszwiebeln und Rosmarin)
  • 1 gestrichener EL Kaltrührgelatine

Alles gründlich verrühren (am besten mit einer Gabel, dann Gelatine gut unterrühren). Mit einem Teelöffel Portionen abstechen und mit kalt abgespülten Händen eine Kugel rollen. Je feuchter die Hände, desto besser lassen sich die Kugeln rollen.
Wer will kann die Kugeln verfeinern

  • in getrockneten oder frischen Kräutern rollen
  • als herzhafte Variante in Paprikapulver oder Pfeffer rollen

Vegane Variante’:

  • 250 g weichen Tofu (keinen Seidentofu sondern den nicht schnittfesten Tofu)
  • 3 EL Sojajoghurt
  • 3 EL gehackte Kräuter (ich mag Basilikum, Frühlingszwiebeln und Rosmarin)
  • 1 gestrichener EL Guarkernmehl

Ca. 1 h in den Kühlschrank stellen. Die Frischkäsekugeln lassen sich hervorragend vorbereiten, z.B. für den Osterbrunch und schmecken toll zum Dukan Rührei

I love cream cheese balls. In Germany you can get delicious organic goat cream cheese balls with garlic and herbs. Unfortunately goat cream cheese is not Dukan…..but you can easily create something comparable!

For 15 balls you need

  • 1 package of cream cheese with herbs (200 g)
  • 3 table spoons of low fat quark
  • 3 table spoons of herbs (fresh or dry, I love basil, rosemary and garlic)
  • 1 table spoon of gelatine or agar agar (pay attention that you can use it without heating the ingredients)

AMix everything together with a fork and use a tea spoon to make small balls. Roll them with wet hands (simply put them in cold water). If you want, you can finalize the balls by rolling them in dried herbs, dried pepper, or fresh herbs.

Put them in the fridge for 1 hour and then enjoy! Perfect with the Dukan scrambled egg (see picture)

Das perfekte Osterfrühsück: Rührei im Lachsbett

Not only around easter I love scrambled egg and salmon, but I do not like all the mixing and pan cleaning. The perfect solution is a microwave version:

Per serving you need

  • 1 Egg
  • 1 tablespoon cream cheese with herbs
  • 2 slices smoked salmon

Mix the egg and the cream cheese. Cover the inside of a small glass bowl with the smoked salmon and pour the egg in. Put in the microwave for about 5-6 minutes (pay attention, the egg tends to flow over)
You can eat it out of the bowl or put in on a plate like a little souffle. I prefer it with toasted gluten bread and cream cheese balls.

Gerade an Ostern esse ich gerne Rührei mit Lachs – habe aber oft keine Lust lange zu rühren. Eine perfekte Lösung ist das Mikrowellen-Rührei:
Pro Portion
– 1 Ei
– 1 EL Frischkäse 0,2% Kräuter
– 1 Scheibe Lachs

Ei und Frischkäse gut verrühren. Ein kleines Glas mit 1 Scheibe Lachs auslegen, Ei einfüllen und ca 5 min in der Mikrowelle garen.
Aus dem Glas essen oder stürzen, nach Belieben dekorieren. Lecker dazu: getoastetes Glutenbrot oder (mein Favorit) leckere Frischkäsekugeln

Eier Benedict

Ein Klassiker der Dukan-Küche sind Eier… hier als Eier Benedict z.B. für einen schönen Brunch

Das Ei

  • 1 Ei
  • 1 Eigelb
  • 4 Scheiben Puten Coppa (oder mageren Schinken)

Für das Ei (einfache Variante)

  1. Schinken in einer Pfanne anbraten (oder auf ein Küchenpapier in die Mikrowelle geben, wird auch knusprig).
  2. Ei in eine Pfanne schlagen und das zweite Eiweiß darübergeben.
  3. Von beiden Seiten fertigbraten

Für das Ei (Profivariante) – hier wird kein 2. Eiweiß benötigt:

  1. Ein kleines Glas mit 2 EL Essig füllen. Ei hineinschlagen und 5 min stehen lassen (nicht rühren, das Ei soll nur rundherum mit Essig benetzt sein)
  2. Einen Topf mit Wasser aufsetzen, Salz hinzugeben und zum simmern bringen (kurz vor kochen, es steigen schon kleine Blasen auf aber das Wasser kocht noch nicht komplett).
  3. Jetzt mit einem Schneebesen so kräftig rühren, dass ein richtiger Strudel in der Mitte entsteht. Der Trichter muss richtig tief sein. In diesen Trichter jetzt das Ei (mitsamt dem Essig) geben.
  4. 2 min simmern lassen – dann ist das Eiweiß fest und das Eigelb noch leicht flüssig.
  5. Auf den Speck geben und mit Soße übergießen

Für die Sauce

  • 1 Eigelb
  • 1 TL Dijonsenf (ich mag am liebsten den mit Kräutern, auch wenn der sehr grün ist)
  • 2 TL Zitronensaft
  • 2 EL ml warme Milch

Für die Sauce:

  1. Das Eigelb, den Senf und Zitronensaft verrühren (Schneebesen) und in einem kleinen Topf oder einem Soßentopf vorsichtig auf dem Herd erwärmen. U
  2. Unter ständigem Rühren erwärmen (nicht kochen) bis das Eigelb immer dicker wird. Nun die warme Milch hinzufügen und unter Rühren ca. 2-3 min weiter erwärmen. Die Sauce wird gelblich  und dick, von der Konsistenz wie eine Hollandaise.

Egg Benedict is a classic egg receipe – unfortunately it includes a very rich sauce holandaise which is not very dukan 🙁

An easy dukan version is

The egg

  • 1 egg
  • 1 egg white
  • 4 slices of low fat bacon

Preparation (easy version)

  1. Put bacon on a plate with some tissue and make it crispy (about 2 min on high)
  2. Put some oil or pam spray in a pan and put egg in pan, wait 30 sec until egg white starts to become solid and pur the additional egg white on. This creates the poached egg effect.
  3. bake on two sides and arrage  on bacon on a plate

Poached egg (professional version)

  1. Fill a small glass with 2 table spoons of vinegar and crack the egg into it. Let it rest for approx 5 min.
  2. Fill a big pot with water and salt and bring to cook. If it cooks, take an egg whisk and start vigorously to bring the water to circle. There must be a tiny tornado in the middle of the water. Pour the egg with the vinegar exactly in the middle of that tornado and maintain the tornado by continously whisking around the pot.
  3. As soon as the water cooks again, lower the temperatur to a simmer. Make sure that the tornado is still there – this ensures that the egg white is wrapping around the egg yolk and you get that cushion-like form for the egg
  4. Take out after 2 min (the egg yolk is slightly liquid then)

For the sauce

  • 1 egg yolk
  • 1 tea spoon of dijon mustard
  • 2 tea spoons of lemon juice
  • 2 table warm milk

Preparation:

  1. Whisk the egg yolk, the mustard and the lemon juice together ( it must become a bit creamy). Add the warm milk and pour into a small pot. Never stop whisking – and slowly heat up the mixture. it will become thicker and very creamy.
  2. It is ready after approx 5 min. I achieve the best result if I do it in a water bath and whisk by hand

Mousse au Chocolat

300 g Seidentofu
3 EL fettarmes Kakaopulver
1/2 TL AgarAgar oder Johannesbrotkernmehl
100 ml kalte Milch oder Wasser
Süßstoff nach Bedarf
Vanilleschote gemalen (oder Dukan Vanillezucker)
 Kaltes Wasser/Milch mit Agar Agar vorsichtig erwärmen (bis Agar Agar aufgelöst ist). Wer Kaltrührgelatine verwendet kann diesen Schritt überspringen. Süßstoff und Vanille hinzufügen und abkühlen lassen.
Tofu mit Kakao gut aufrühren, Milchmischung hinzufügen und zügig gründlich verrühren.


Für mindestens 45 min in den Kühlschrank geben – schmeckt super lecker.
Noch luftiger wird es, wenn man 1 Eiweiß steif schlägt und zum Schluß vorsichtig unterhebt. Dann das Mousse schnell verzehren.

Frischkäsetaler

Ein superschnelles aber sehr leckeres Rezept für PP-Tage

Grundversion:
1 Packung Frischkäse (z.B. Exquise 0,2% Fett)
1 Ei
1 EL kaltes Wasser
1 EL Sojamehl
1/2 TL Backpulver
Gewürze

Ei mit Wasser, Backpulver und Sojamehl gut verrühren (wer möchte schlägt das Eiweiß separat auf). Frischkäse gut unterrühren und alles nach Geschmack abwürzen.
Backofen auf 180 Grad vorheizen – aus der Frischkäsemasse 6 Kleckse auf ein mit Backpapier belegtes Backblech geben und 8-10 min backen. Dann vorsichtig wenden und ca. 5 min fertig backen.

Variante 1:
2 VielLeicht Bratwürste klein schneiden und unter die Masse heben. Backzeit verlängert sich dann um ca. 2 Minuten

Variante 2: Schinkenwürfel unterheben

Variante 3: vorgekochten Minispargel und Schinkenwürfel unterheben (dann PG)

One of the quickest PP-recipes:

Basic version:

  • 1 pack of low fat cream cheese (150 g)
  • 1 egg
  • 1 table spoon of cold water
  • 1 table spoon of soy flour
  • 1/2 tea spoon of backing soda
  • herbs

Mix everything together and add so much soy flour, that the mixture has the same consistence than a thick pancake batter. Season to your personal taste (or see suggestions below)

  1. Preheat the oven to 180 degrees celcius
  2. Line a backing tray with some paper and form 6 circles of batter on the paper.
  3. Bake for 8 min, then turn und bake for additional 5 minutes

Version 1:
Cut 2 low-fat saucages or some low fat bacon in small pieces and put in the batter. Season with pepper and green herbs.

Version 2: add some mini asparagus and low fat bacon – then it is a PG dish
